Instagram Vegans Unite!

One thing I like about Instagram is being able to unite with others like us- VEGANS!

I have had Instagram for 2 years now, and I think it’s a pretty neat app. I like being able to see and share food !!! I love being able to connect and follow other Vegans in their everyday eats and adventures. Being able to follow people from all over the world means, different foods, from different cultures; From the countries of Spain, Australia, and Scotland to states like California, Texas and New York! We are all different. Each countries and states have their different cultures, and I love being able to see them through food, especially Vegan dishes!

Two of my top followers are VEGANFOODSHARE and VEGANSOFIG. These names speak for themselves!

Instagram Vegan Community Unite!!!

VeganFoodShare  share daily pictures of meals tagged #veganfoodshare. They also feature many different individuals to explain the main dish they have chosen along with a little bio of themselves. Neat, no? It almost feels like winning an award!

Vegansofig [Vegans Of Instagram] shares tips, where to shop, talks about nutrition, animal cruelty, activist work, fashion, and simple ways to help others have a sane walk into Veganism. Vegansofig has got you covered.

Even I have learned a few things. I love being able to help others, it’s nice to be surrounded by people that share the same likes and interests. I love food, I love cooking, and I love being able to show my cooking skills, hehe. I have made some great friends along the way. Don’t be fooled by an app! I have seen people fall in LOVE through Instagram, if people can fall in love  through Instagram, we can encourage others to better their eating habits  through a dash of curiosity and few pictures!  A picture is worth a thousand words!

It’s A Wrap!

There comes a day where you just don’t feel like being in front of the stove for too long. I love cooking and spending time in the kitchen from soaking beans to chopping vegetables and all, but sometimes, I get lazy and just want to keep things easy.

Here is an easy wrap I made this week. Preparation time? Not even 20 minutes.

Veggie World!

So here’s what you’ll need.

-Half a cup of Spinach

-1 Wheat Wrap [I used a Stone Ground Wheat Pita]

-1 Head of Broccoli

- Hummus Spread of your choice

-1 Tomato

I told you it would be easy.

I steamed the spinach for about 10 minutes along with the broccoli. I like the taste of steamed vegetables. It’s the fastest to cook and easiest way to keep all of the nutrients, plus I just love the crunching sound of broccoli!

Once your vegetables are steamed and tomato sliced, it’s time to add your hummus spread, I used a Roasted Red Pepper Hummus spread for my wrap. Spread the hummus as much as you want then add your vegetables!

It’s a Wrap!

Wrap it in and Voila! IT’S A WRAP! Easy, healthy and flavourful! I added a little Sriracha sauce to seal the deal. As for a final bite, I took a banana and sliced it in the plate. I enjoy eating cold wraps during the summer, they’re not too heavy and hot. They’ve become the perfect meal.

No, It’s Not Mos Eisley Cantina but Tin Lizzy’s Cantina!

One thing I love most about summer are the open terrace!  All you need is a couple of your girlfriends, a sundress, an open rooftop and great food. Located in Grant Park, Tin Lizzy’s Cantina is that perfect place. I used to always peep it next to Republic House, so I thought why not give it a try? Oh man, was I glad we did!

Vegan Tacos with Avocados!

There’s nothing like some good tacos on a hot day! I ordered 2 tacos. They consisted of Veggie Mexican rice and Veggie Black Beans. *Side note, what I like about this place is that it tells you what is Vegetarian friendly. Beware, a lot of Mexican Restaurant uses chicken stock in their rice and pork in refried beans. Nicely ask your server to double check for you and if a Vegetarian friendly option is offered. Continuing… Grilled peppers and Onions with slices of Avocado.

I loved every single bites of it! The rice was seasoned to perfection and the grilled peppers and onions steaming hot and juicy! The perfect meal for a hot day. The tacos weren’t too heavy or filling, but just enough for me.

I can genuinely say that Tin Lizzy’s has the best tacos in Grant Park.

But wait, there’s more!!!!!! They serve TATOR TOTS!!

Yes ladies and gents. It’s a dream come true. A bucket of Tator Tots. I almost fainted when my server mentioned them to me, or maybe it was the heat. No! It was the Tots! Look at those golden beauties, ready to be digested!

Mighty Mighty Scramble!

I woke up this morning with a song a friend sent me “The One” by Twin Shadow and the urge to scramble!

Not everyone  has the power to wake up with a beautiful smile in the morning, I never take mines for granted. Be happy in all that you do. On that note I ran downstairs went in the fridge and picked up my ingredients!

-Seitan Strips

-4 Mushrooms

-Half an Onion

-Half a block of Extra Firm Tofu

The Mighty Mighty Scramble.

In a separate bowl I seasoned the Seitan strips with hoisin and sriracha sauce and added ground pepper. I let it sit for 5 minutes, while the tofu is sizzling in the pan. I usually cook with Earth Balance but I sometimes use Olive oil. After the 5 minutes I mixed in the Seitan strips and Tofu and let it fry together. I added seasoned salt, ground pepper and herb’s seasoning while it cooked. After letting it get a little colour, I added the sliced mushrooms and onions and let it sauteed.

More Sriracha on the top and Voila!

What I like about Tofu, Seitan and Tempeh is that you are free to do anything with it. You can season it any ways you desire. Let it be your blank canvas!

My life in high school was not much different than it is now, in terms of literature; however, now I read for leisure. Then, I read nonfiction out of necessity; to break up the mundane, to win a war of attrition with a tyrant. I lived with my grandfather during those times. In a bubble of plenary isolation, I existed. According to my grandfather I didn’t have “friends,” I had “associates” and thus couldn’t see or talk to anyone outside of the school building. But along with that, I was forbidden to read anything secular. So, as a genetically predisposed dissenter, I read secretly. Anything from Hemingway to King to Klosterman; it was my secret I relished in, escaping my prison. My senior year I had a French teacher who didn’t just go through the motions; she actually cared. It was with Mme Williams I learned to appreciate French prose through reading and writing my own essays, en français. With Lautréamont and Camus in my repertoire, I became obsessed with how beautiful the French language was; how it seems to have an infinite capacity in astonishing me with it’s intricacies.

I love writing in French, not only for the nostalgia, but also because in a way I’m discretely paying homage to Mme Williams while keeping my love of literature secret from my grandfather. Even now, I guess I’m still that naive kid who believes literature is my best-kept secret. – Taji Harris
